- 4 Zucchini
- 150 g White rice
- 1 Onion
- 40 g Pine nuts
- 2 Tomato
- 4 tbsp Extra-virgin olive oil
- 1 tsp Salt
- 3 tbsp Mint (optional)

Method
- Heat the oven to 190°C (375°F).
- Halve and hollow the zucchini, chopping the flesh.
