  • 200 g White fish fillet
  • 150 g Cucumber
  • 5 g Dried wakame
  • 1 tbsp Rice vinegar
  • 1 tsp Toasted sesame oil
  • 8 g Ginger (optional)
  • 5 g Sesame seeds (optional)

Method

  1. Slice the cucumber into paper-thin rounds, salt them lightly and leave them in a colander for ten minutes, then squeeze them dry in your fist. Skipping this leaves the dressing watery within minutes.
  2. Cover the wakame with cold water and leave it five minutes to swell, then drain it and squeeze it out. Grate the ginger.
  3. Cook the fish in the sesame oil over a medium flame, four minutes on the first side and two on the second, until it flakes at a gentle push.
  4. Slide the fish onto a cold plate and leave it four minutes until it is no longer hot — sunomono is a cold dish and warm fish would wilt the cucumber.
  5. Toss the squeezed cucumber and wakame with the rice vinegar and ginger, break the cooled fish over in large flakes and scatter the sesame seeds.
