Ingredients

Servings 2
  • 250 g Chicken breast
  • 180 g Fettuccine
  • 15 g Butter
  • 4 cloves Garlic
  • 150 ml Cream
  • 25 g Parmigiano-Reggiano
  • 2 tsp Hot sauce
  • 1 tsp Salt
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp Parsley (optional)
  • ½ tsp Smoked paprika (optional)
  • ½ tsp Garlic powder (optional)
  • ¾ tsp Black pepper (optional)

Method

  1. Bring a large pot of salted water to a rolling boil.
  2. While the water heats, slice the chicken breast and season it with the salt, the black pepper, the smoked paprika and the garlic powder.
  3. Mince the garlic and roughly chop the parsley.
  4. Cook the fettuccine in the boiling water until al dente, then reserve a mugful of pasta water and drain.
  5. Heat a wide pan over medium-high and melt the butter. Cook the chicken until golden and cooked through, 4-5 minutes, then lift onto a plate.
  6. Lower the heat to medium and melt the remaining butter. Add the garlic and cook for 30 seconds until fragrant.
  7. Pour in the cream and simmer gently for 1-2 minutes, then stir in the Parmesan until smooth.
  8. Stir in the Tabasco, Dijon mustard and the remaining black pepper. Taste and add more Tabasco if you want extra zing.
  9. Return the chicken to the pan, add the drained pasta and a splash of the pasta water, and toss until glossy and coated. Loosen with more pasta water if needed.
  10. Stir the parsley through and serve straight away.

About Garlic Butter Tabasco Chicken Alfredo

Garlic butter Tabasco chicken Alfredo is a classic creamy pasta with a deliberate edge. The foundation is familiar — golden chicken and fettuccine bound in a Parmesan cream sauce built on garlic and butter — but a good shake of Tabasco and a spoonful of Dijon mustard cut straight through the richness, adding heat and a tang that keeps the whole dish from feeling heavy. Alfredo began as a simple Roman toss of butter, Parmesan and pasta water; the cream-based version most people know today is its richer American descendant, and the hot sauce here is a modern liberty that makes it genuinely moreish.

Fettuccine is the traditional choice because its wide ribbons hold the sauce, though linguine or any long pasta works. The key to a smooth sauce is gentle heat: stir the Parmesan in off a hard boil so it does not split, and loosen with a splash of reserved pasta water rather than more cream if it tightens up. The chicken is seared separately and sliced back in at the end so it stays juicy. It is rich, indulgent comfort food at around 850 calories a serving, best balanced with a crisp green salad and treated as the treat that it is.

Garlic Butter Tabasco Chicken Alfredo: frequently asked questions

What is Tabasco chicken Alfredo?

It is a creamy chicken Alfredo pasta spiked with Tabasco and a touch of Dijon mustard. The hot sauce and mustard cut through the richness of the Parmesan cream sauce, giving the dish a gentle heat and tang alongside the classic garlic-butter base.

Can I make Alfredo without heavy cream?

Yes. This recipe uses lighter cooking cream, and you can loosen the sauce further with reserved pasta water for a thinner, less heavy result. Some cooks build Alfredo from just butter, Parmesan and pasta water, skipping cream altogether.

What pasta is best for Alfredo?

Fettuccine is the classic choice — its wide, flat ribbons hold the creamy sauce beautifully. Linguine or any long pasta also works; short shapes like penne catch sauce in their ridges if that is what you have.

Why add Tabasco to Alfredo?

A creamy Parmesan sauce can taste flat or overly rich on its own. Tabasco adds heat and acidity that brightens the whole dish, while the Dijon mustard deepens the savoury notes — together they keep every bite from feeling heavy.

How do you keep Alfredo sauce from splitting?

Keep the heat gentle once the cream and cheese go in — high heat makes the sauce break and turn grainy. Stir the Parmesan in off a hard boil, and loosen with pasta water rather than more cream if it gets too thick.

Is chicken Alfredo unhealthy?

It is an indulgent dish — cream, butter and Parmesan make it rich and calorie-dense, around 857 calories per serving here. It does carry solid protein from the chicken (about 44g), but it is best treated as a comfort meal rather than an everyday light option.

What can I serve with chicken Alfredo?

A crisp green salad or garlicky sauteed greens balance the richness, and garlic bread is a classic side. Keep the sides light, since the pasta itself is filling.
