  • 200 g Japanese short-grain rice
  • 1 Egg
  • 1 tbsp Japanese soy sauce (koikuchi shoyu)
  • 1 Scallions

Method

  1. Rinse the rice in cold water until it runs nearly clear. Drain.
  2. Combine the rice with the same volume of fresh water in a heavy saucepan. Cover and bring to a boil.
  3. Drop the heat to its lowest setting and cook 12 minutes. Don't lift the lid.
  4. Pull the pot off the heat. Rest 10 minutes, lid on.
  5. While the rice cooks: slice the scallion thin.
  6. Spoon the hot cooked rice into a bowl.
  7. Crack the egg over the rice and add the soy.
  8. Beat the egg into the hot rice with chopsticks until creamy, scatter the scallion over, and eat at once.
