  • 200 g Konjac rice
  • 2 Egg
  • 150 g Silken tofu
  • 80 g Avocado
  • 2 tsp Toasted sesame oil
  • 80 g Spinach (optional)
  • 2 tsp Soy sauce (optional)
  • 2 g Nori sheets (optional)
  • 1 tsp Sesame seeds (optional)

Method

  1. Drain the konjac rice and rinse it thoroughly under cold running water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak against the pan.
  2. While the konjac dries out: beat the eggs with a pinch of salt, slice the avocado, and drain the silken tofu.
  3. Warm half the sesame oil in a small pan over low heat and wilt the spinach for 1 minute, then push it to one side.
  4. Pour the beaten egg into the same pan over low heat and stir it slowly for 2 minutes, pulling it into soft curds and taking it off while it is still glossy.
  5. Spread the hot konjac rice in a bowl. Spoon the soft egg and the wilted spinach over one half and set the silken tofu and avocado on the other. Trickle over the remaining sesame oil and the soy sauce, and finish with torn nori and sesame seeds.
