Ingredients

  • 700 g Chicken thighs
  • 150 g Greek yogurt
  • 20 g Ginger
  • 4 cloves Garlic
  • 1 tbsp Garam masala
  • 1 tsp Kashmiri chili powder
  • 1 Lemon
  • 1 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 3 tbsp Cilantro (optional)

Method

  1. Grate the ginger and garlic and mix with the yogurt, garam masala, chili powder, lemon juice, oil, and salt.
  2. Slash the chicken and turn it through the marinade; leave to sit while the pan heats.
  3. Sear the chicken over high heat, turning, until charred and cooked through, about 6 minutes a side.
  4. Rest 3 minutes, then scatter with cilantro and serve.
