  • 400 g Jasmine rice
  • 200 g Chicken
  • 2 Egg
  • 3 cloves Garlic
  • 3 Scallions
  • 2 tbsp Fish sauce
  • 1 tbsp Light soy sauce
  • 2 tbsp Neutral oil
  • 1 tsp Sugar
  • 1 Lime (optional)

Method

  1. Dice the chicken, mince the garlic, and slice the scallions.
  2. Heat the neutral oil in a wok over high heat, crack in the eggs, and scramble until just set.
  3. Add the garlic and chicken and stir-fry over high heat until the chicken is cooked through.
  4. Add the jasmine rice and toss over high heat, seasoning with the fish sauce, light soy sauce, and sugar, until the grains are hot and separate.
  5. Fold in the scallions and serve with a lime wedge.
