  • 500 g Mascarpone
  • 4 Egg yolk
  • 100 g Sugar
  • 300 ml Espresso
  • 20 g Cocoa powder

Method

  1. Whisk the egg yolks with the sugar until pale and thick.
  2. Fold the mascarpone into the yolks until smooth and spreadable.
  3. Dip each ladyfinger briefly in the cooled espresso and line a dish with a layer.
  4. Spread half the mascarpone cream over the soaked ladyfingers.
  5. Repeat with a second layer of soaked ladyfingers and the rest of the cream.
  6. Chill until set, at least 4 hours.
  7. Dust thickly with cocoa just before serving.
