- 70 g Japanese short-grain rice
- 200 g Silken tofu
- 150 g Spinach
- 12 g Ginger
- 1 tsp Toasted sesame oil
- 50 g Carrot (optional)
- 1 tsp Soy sauce (optional)
- 1 tsp Sesame seeds (optional)
Method
- Rinse the rice until the water runs clear, then cook it in one and a quarter times its volume of water, covered, until the water is absorbed, about 18 minutes.
- While the rice cooks: cut the carrot into fine matchsticks, grate the ginger, and wash the spinach.
- Warm the sesame oil in a wide pan over medium-low with the grated ginger for 1 minute, until fragrant but not coloured.
- Add the carrot and cook 2 minutes, then add the spinach and turn it through until it collapses, about 1 minute more.
- Slide the silken tofu into the pan in large spoonfuls, add the soy sauce and a splash of water, and warm through over low heat for 3 minutes without stirring, so the tofu stays in pieces.
- Fluff the rice into a bowl and spoon the tofu, spinach and carrot over it with the ginger oil from the pan. Finish with sesame seeds.
