About Dau Hu Sa Ot (Lemongrass Chili Tofu)
Dau hu sa ot is a Vietnamese stir-fry of crisp tofu with lemongrass and chili, a vegan dish that leans entirely on aromatics to carry it. Firm tofu is pressed, cubed, and fried until golden and crisp on every side, which gives it the sturdy exterior it needs to stand up to the seasoning, then it's tossed back with a fragrant base of minced lemongrass, garlic, and Thai chili. The lemongrass is the defining note, citrusy and grassy, and frying it until aromatic before the tofu returns is what perfumes the whole pan.
Seasoned simply with light soy and a little sugar, the dish balances the lemongrass heat against a touch of sweetness and finishes with fresh scallions scattered over. It's fast, high in protein, and made for two, coming together in about twenty-five minutes with rice on the side to round it into a meal. The one habit worth keeping is not rushing the tofu: crisping every face properly is what keeps it from going soft and soggy once the sauce hits the pan.
