  • 350 g Firm tofu
  • ½ tsp Ground turmeric
  • ½ Onion
  • 1 tbsp Soy sauce
  • 2 tbsp Neutral oil
  • 2 cloves Garlic (optional)
  • 1 Scallions (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Pat the tofu block dry with paper towels, pressing gently to squeeze out surface moisture.
  2. Dice the onion and mince the garlic.
  3. Slice the scallion thinly for topping. (optional)
  4. Heat the oil in a wide skillet over medium and soften the diced onion until translucent, about 4 minutes; add the garlic for the last minute.
  5. Crumble the tofu into the pan with the turmeric and fry, tossing, until the moisture cooks off and the edges take on color, about 6 minutes.
  6. Season the scramble with the soy sauce and plenty of black pepper, tossing to coat.
  7. Plate the scramble, top with scallions if you sliced them, and serve with toast, exactly like the egg version.
