About Tom Jued
Tom jued is the clear, mild soup of the Thai table, the gentle counterpoint to the fiery curries and hot-sour soups it's usually served beside. Its name signals its character: a bland, soothing broth meant to cool and reset the palate rather than dominate it. This version carries pork balls seasoned with garlic and white pepper, silken tofu, cabbage, and glass noodles in a light chicken stock, so the flavor is delicate and clean, savory from fish sauce with a faint peppery warmth. Eating it feels restorative, the sort of bowl you reach for when you want comfort without heat or heaviness.
Much of the appeal is in how little the broth is manipulated. The pork is rolled into small balls and poached directly in the simmering stock, which keeps the soup clear and lets the meat gently flavor the liquid as it cooks. The tofu and noodles are only warmed through at the end so nothing turns to mush, and the cabbage keeps a slight bite. Serving four, it's a fast, high-protein soup that works as a light meal on its own or as the calming element in a larger spread of bolder Thai dishes.
