- 500 g Shrimp
- 3 cloves Garlic
- 2 Shallot
- 2 tbsp Fish sauce
- 1 tbsp Sugar
- ½ tsp Black pepper
- 1 tbsp Neutral oil
- 2 Scallions (optional)
Method
- Melt the sugar in the oil to a light caramel, then add the shallot and garlic.
- Add the shrimp and fish sauce and simmer, turning, until glazed and just cooked, 6 minutes.
- Finish with lots of black pepper and scallions.
