  • 500 g Shrimp
  • 3 cloves Garlic
  • 2 Shallot
  • 2 tbsp Fish sauce
  • 1 tbsp Sugar
  • ½ tsp Black pepper
  • 1 tbsp Neutral oil
  • 2 Scallions (optional)

Method

  1. Melt the sugar in the oil to a light caramel, then add the shallot and garlic.
  2. Add the shrimp and fish sauce and simmer, turning, until glazed and just cooked, 6 minutes.
  3. Finish with lots of black pepper and scallions.
