  • 2 tbsp Neutral oil
  • 1 tsp Sugar
  • ¾ tsp Salt
  • 2 Scallions (optional)
  • ½ tsp Toasted sesame oil (optional)

Method

  1. Cut the tomatoes into wedges.
  2. Slice the scallions, keeping the whites and greens separate.
  3. Beat the eggs in a bowl with a pinch of the salt.
  4. Rinse the rice and simmer it covered in a pot until tender, about 15 minutes.
  5. Soft-scramble the eggs in half the neutral oil over medium-high until barely set, then remove to a plate.
  6. Stir-fry the scallion whites in the rest of the oil, then add the tomatoes, sugar, and remaining salt and cook until saucy, about 4 minutes.
  7. Fold the scrambled eggs back in for 30 seconds, then finish with the scallion greens and sesame oil.
  8. Serve the tomato and egg hot over the rice.
