About Torta Caprese

Torta Caprese is a flourless almond and chocolate cake from the island of Capri, off the Amalfi Coast. Legend holds it was born of a happy accident — a baker forgetting the flour — and its lack of flour makes it naturally suited to those avoiding wheat. Ground almonds take the place of flour entirely, bound with dark chocolate, butter, sugar and eggs into a dense, low, cracked-topped cake dusted with powdered sugar.

The texture is the whole point: a thin crisp crust over a moist, fudgy, almost truffle-like interior, kept that way by baking only until the center is just set. The flavor is deeply chocolatey with a warm, marzipan-like nuttiness from the almonds, rich without being cloying. Whisking the eggs and sugar to a pale, thick foam before folding in the chocolate and almond meal gives it a fine, tender crumb rather than a leaden one. Served in wedges with a dusting of sugar and often a coffee, it's a rustic Italian dessert that manages to feel both homely and indulgent — and it's forgiving enough for cooks who don't consider themselves bakers.
