  • 6 Egg

  • 2 cloves Garlic
  • 4 tbsp Extra-virgin olive oil
  • ¾ tsp Salt

Method

  1. Chop the onion and garlic.
  2. Soften the onion and garlic in the oil with the salt until translucent, then add the spinach and wilt it down.
  3. Drain off any excess liquid from the spinach mixture.
  4. Beat the eggs and fold in the spinach mixture.
  5. Set the tortilla in the pan, then flip and finish so the centre stays soft.
  6. Slide out and cut into wedges.
