- 200 g Spaghetti
- 260 g Tinned tuna
- 3 Egg
- 14 ml Garlic-infused olive oil
- 1 tbsp Salt
- 15 g Capers (optional)
- 2 cloves Garlic (optional)
- 1 Lemon (optional)
- 18 g Parmigiano-Reggiano (optional)
- 3 tbsp Parsley (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a pot of water to a boil. Salt it.
- Drain the tuna and break it into large flakes. Mince the garlic, chop the parsley, and zest the lemon.
- Lower the eggs into a small pan of simmering water and cook for 6 minutes for a soft-set yolk, then run under cold water and peel.
- Halve the peeled eggs.
- Cook the spaghetti one minute shy of al dente.
- While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium heat with the garlic and capers until fragrant, about 1 minute.
- Reserve a mugful of pasta water, then drain.
- Tip the pasta into the pan off heat with the lemon zest and a splash of pasta water. Toss until glossy, then fold in the tuna, keeping it in large flakes.
- Top with the halved eggs, parmesan, parsley, and a squeeze of lemon juice.
