Ingredients

  • 106 g Fusilli
  • 160 g Tinned tuna
  • 190 g Arugula
  • 300 g Cherry tomatoes
  • 5 ml Extra-virgin olive oil
  • 1 Lemon
  • 1 tbsp Salt
  • 6 g Parmigiano-Reggiano (optional)
  • ½ tsp Red pepper flakes (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Halve the cherry tomatoes and zest and juice the lemon.
  3. Drain the tuna and break it into large flakes.
  4. Cook the fusilli to full al dente.
  5. Reserve a mugful of pasta water, then drain the pasta and run it briefly under cold water to stop it cooking.
  6. Toss the warm pasta with the olive oil, lemon zest and juice, and a splash of pasta water until glossy.
  7. Fold in the tuna, cherry tomatoes, and rocket, keeping the tuna in large flakes.
  8. Finish with the parmesan, red pepper flakes, and black pepper.
