- 106 g Fusilli
- 160 g Tinned tuna
- 190 g Arugula
- 300 g Cherry tomatoes
- 5 ml Extra-virgin olive oil
- 1 Lemon
- 1 tbsp Salt
- 6 g Parmigiano-Reggiano (optional)
- ½ tsp Red pepper flakes (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a pot of water to a boil. Salt it.
- Halve the cherry tomatoes and zest and juice the lemon.
- Drain the tuna and break it into large flakes.
- Cook the fusilli to full al dente.
- Reserve a mugful of pasta water, then drain the pasta and run it briefly under cold water to stop it cooking.
- Toss the warm pasta with the olive oil, lemon zest and juice, and a splash of pasta water until glossy.
- Fold in the tuna, cherry tomatoes, and rocket, keeping the tuna in large flakes.
- Finish with the parmesan, red pepper flakes, and black pepper.
