About Adrak Haldi Murgh (Turmeric Ginger Chicken)

Adrak haldi murgh, turmeric ginger chicken, is a lighter, cleaner-tasting Indian braise that leans on just two headline aromatics rather than a long masala. Bone-in flavor from browned chicken thighs meets a sauce built on ginger and turmeric, rounded out with cumin and coriander and enriched with cream. It sits apart from heavier curries by keeping the spicing bright and legible; you taste the fresh warmth of the ginger and the earthy, slightly bitter turmeric clearly, rather than a dozen ground spices blurred together. The name itself, adrak for ginger and haldi for turmeric, tells you exactly what defines it.

The method is efficient and well sequenced, browning the thighs first for color and depth, then softening onion and blooming the spices in the same pan before the chicken goes back to simmer in stock and cream. That gentle covered braise keeps the thighs juicy while the sauce reduces to a golden, glossy gravy that clings without being heavy. A squeeze of lime at the end sharpens everything and keeps the cream from feeling flat. High in protein and low in carbs, it's a comfortable weeknight main that wants little more than rice, naan, or a simple vegetable to round out the plate.
