- 55 g Rice vermicelli
- 210 g Chicken breast
- 150 g Zucchini
- 12 g Ginger
- 1 tsp Garlic-infused olive oil
- 70 g Carrot (optional)
- 5 g Kombu (dried kelp) (optional)
- ½ tsp Japanese light soy sauce (usukuchi) (optional)
Method
- Cut the chicken into broad strips, the courgette into half-moons and the carrot into thin coins. Cut the ginger into fine threads.
- Put the kombu in a pan of cold water with the ginger threads and bring it slowly to the point of shivering, then lift the kombu out before it boils — held past that it turns the broth bitter and slippery.
- Slide the chicken into the broth with the carrot and hold it at a bare tremble for eight minutes, until the strips are white through. Add the courgette and the soy for the last two.
- Soak the rice vermicelli in just-boiled water for four minutes, until the strands bend without breaking, then drain.
- Coil the vermicelli into a deep bowl, lift the chicken and vegetables over it, ladle the broth down the side and trickle the garlic-infused oil across the top.
