About Uova al Pomodoro

Uova al Pomodoro is the Italian answer to eggs cooked directly in sauce: eggs poached in a quick, garlicky tomato base until the whites just set and the yolks stay soft. It belongs to a broad Mediterranean tradition of one-pan tomato-and-egg dishes, but this version leans distinctly Italian in its simplicity, built on tomato passata, sliced garlic warmed in olive oil, and a scatter of fresh basil. The sauce is deliberately loose and bright rather than heavy, and the whole thing comes together in about twenty minutes in a single pan. Cracking the eggs into wells and covering the pan traps steam so the whites firm up while the yolks stay runny.

It eats rich but not stodgy, the sweet-acidic tomato playing against creamy yolk, with the garlic and basil keeping each bite lively. Though it sits under the breakfast heading, in Italy this kind of dish is genuinely all-day food, as good for a light supper as for a slow morning. Serve it straight from the pan with crusty bread to mop up the sauce and drag through the yolks. It scales easily and needs nothing more than a grind of black pepper and a drizzle of good olive oil to feel complete.
