- ½ Cauliflower
- 2 Carrot
- 150 g Frozen peas
- 150 g Paneer
- 2 Onion
- 3 Tomato
- 40 g Cashews
- 1 tsp Garam masala
- 80 ml Heavy cream
- 3 tbsp Ghee
- 1 tsp Salt
Method
- Cut the cauliflower and carrot into bite-size pieces, cube the paneer, grate the onion and tomato, and soak the cashews in a little hot water.
- Fry the grated onion in the ghee over medium heat until golden, then add the grated tomato and cook down until thick.
- Blend the onion-tomato base with the soaked cashews into a smooth gravy and return it to the pan.
- Simmer the cauliflower, carrot, and peas in the gravy with the salt until tender, then fold in the paneer and cream and warm through.
- Stir in the garam masala off the heat.
- Serve with rice or naan.
