  • 150 g Moong dal (yellow split mung)
  • 2 Carrot
  • 150 g Green beans
  • 150 ml Coconut milk
  • 1 tsp Cumin seeds
  • 1 tsp Brown mustard seeds
  • 10 Curry leaves
  • ½ tsp Ground turmeric
  • 2 tbsp Coconut oil
  • 1 tsp Salt

Method

  1. Rinse the dal and chop the carrot and beans.
  2. Simmer the dal and vegetables with turmeric until soft, about 18 minutes.
  3. Stir in the coconut milk and warm through.
  4. Heat the coconut oil over medium heat and add the mustard seeds, cumin seeds, and curry leaves; once the seeds pop, pour this over the kootu.
  5. Serve with rice.
