Navratan Korma (Vegetable Korma)
Mild creamy mixed-vegetable curry

Ingredients
- 1 Onion
- 20 g Ginger
- 4 cloves Garlic
- 50 g Cashews
- 200 ml Coconut milk
- 80 g Yogurt
- 1 tsp Cumin seeds
- 3 Green cardamom pods
- ½ tsp Ground turmeric
- 2 tsp Ground coriander
- 1 tsp Kashmiri chili powder
- 1 tsp Garam masala
- 2 tbsp Ghee
- 1½ tsp Salt
- 240 g Basmati rice
- 200 g Potatoes (optional)
- 1 Carrot (optional)
- 150 g Green beans (optional)
- ½ head Cauliflower (optional)
- 2 Green chili (optional)
- 1 Tomato (optional)
- 1 Cinnamon stick (optional)
- 1 Bay leaves (optional)
- 2 tbsp Cilantro (optional)
Method
- Rinse the basmati rice until the water runs clear, then cook it in twice its volume of water, covered, until tender and the water is absorbed, about 15 minutes.
- Soak the cashews in just-boiled water for 15 minutes.
- Cube potatoes and carrots 2 cm. Trim and cut beans 3 cm. Cut cauliflower into bite-sized florets.
- Slice the onion. Mince ginger, garlic. Slit chilies. Chop the tomato.
- Blanch the vegetables in salted boiling water 5 minutes — just to 70% tender. Drain.
- Blend the soaked cashews (with their water) into a smooth cream. Whisk the yogurt smooth and let it come to room temperature.
- Melt the ghee in the saucepan over medium heat. Bloom the cumin seeds, cardamom, cinnamon, and bay leaves until fragrant, about 30 seconds.
- Add onion and cook 8 minutes until pale golden (NOT brown — korma stays light).
- Add ginger, garlic, and chilies. Cook 2 minutes. Add turmeric, coriander powder, kashmiri chili, and a splash of water. Cook 1 minute.
- Add tomato. Cook 4 minutes until soft.
- Pull off heat. Whisk in the yogurt one spoonful at a time. Return to low heat. Stir in cashew cream and coconut milk. Add a little salt.
- Slide in the parboiled vegetables. Simmer gently 6 minutes until tender and gravy is creamy.
- Stir in garam masala. Taste for salt.
- Scatter cilantro on top. Serve with naan or rice.
