About Crunchy Veggie Wrap
A crunchy veggie wrap is the workhorse of the packed lunch: raw vegetables and a schmear of cream cheese rolled tight in a flour tortilla, sliced on the bias, and eaten cold. The formula is deli-counter simple, but the details matter — grated carrot, finger-length cucumber sticks, shredded romaine, and scallion give you layered textures rather than a single mush. Spreading the cream cheese all the way to the tortilla's edges does double duty here, seasoning the wrap and acting as the glue that keeps the roll from unraveling.
The eating experience is all crispness and cool freshness, the tangy cream cheese binding the vegetables while salt and pepper wake everything up. Rolling it as tightly as possible is the trick to a wrap that slices cleanly and holds together in a lunchbox hours later. At twelve minutes start to finish and needing no cooking, it's a genuine quick bite for busy days, and it travels well wrapped in paper. Serve it fresh with a handful of chips, or make it ahead and let it chill until lunch.
