- 200 g Konjac noodles (shirataki)
- 100 g Shrimp
- 3 Egg
- 1½ tbsp Neutral oil
- 1 tsp Toasted sesame oil (optional)
- 1 Scallions (optional)
- 5 g Ginger (optional)
- 1 tsp Light soy sauce (optional)
- ¼ tsp White pepper (optional)
Method
- Shell the prawns and pat them bone dry, cut the ginger into hairs, and slice the scallion, keeping the white and green apart.
- Beat the eggs with the soy and white pepper until the whites are broken up but not frothy.
- Drain and rinse the konjac noodles, then dry-fry them in a bare pan until the water has driven off and they squeak when you push them.
- Spread the hot noodles across a warm plate in an even bed and trickle the sesame oil over them.
- Heat the oil in a wok until it shimmers, drop in the ginger and scallion whites until they smell sweet, then the prawns, and lift them out the second they curl and go opaque.
- Turn the heat to its lowest, pour the egg into the same oil and push it slowly from the edges until it sets in soft folds that still run at the centre, then fold the prawns back through.
- Pour the egg and prawns straight over the bed of noodles so it spreads to the rim, and shower the scallion greens on top.
