Tuscan-Style White Bean & Chicken Stew

Ingredients
- 500 g Chicken thighs
- 400 g Cannellini beans
- 150 g Kale
- 2 Carrot
- 1 Onion
- 3 cloves Garlic
- 1 tbsp Rosemary
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
Method
- Dice the chicken, carrot, and onion; mince the garlic and strip the kale.
- Brown the chicken in the oil, then add the onion, carrot, garlic, and rosemary and soften.
- Add the beans, salt, and enough water to cover, and simmer until everything is tender, 18 minutes.
- Stir in the kale and cook until wilted, then mash a few beans to thicken and serve.
- Ladle into bowls and serve.
