Ingredients

  • 500 g Chicken thighs
  • 400 g Cannellini beans
  • 150 g Kale
  • 2 Carrot
  • 1 Onion
  • 3 cloves Garlic
  • 1 tbsp Rosemary
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt

Method

  1. Dice the chicken, carrot, and onion; mince the garlic and strip the kale.
  2. Brown the chicken in the oil, then add the onion, carrot, garlic, and rosemary and soften.
  3. Add the beans, salt, and enough water to cover, and simmer until everything is tender, 18 minutes.
  4. Stir in the kale and cook until wilted, then mash a few beans to thicken and serve.
  5. Ladle into bowls and serve.
