Ingredients

  • 110 g Fusilli
  • 280 g White fish fillet
  • 350 g Cherry tomatoes
  • 12 ml Garlic-infused olive oil
  • 1 tbsp Salt
  • 2 cloves Garlic (optional)
  • 1 bunch Basil (optional)
  • 2 tbsp Parsley (optional)
  • 1 Lemon (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Halve the cherry tomatoes, mince the garlic, and chop the basil and parsley.
  3. Cut the fish into large chunks and season with salt and pepper.
  4. Cook the fusilli one minute shy of al dente.
  5. While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium heat with the garlic until fragrant, about 1 minute. Add the fish and cook, turning gently, until just opaque and flaking, about 4 minutes, then lift out.
  6. Add the cherry tomatoes to the same pan and cook until they blister and slump into a rough sauce, about 4 minutes.
  7. Reserve a mugful of pasta water, then drain.
  8. Return the fish to the pan with the pasta and a splash of pasta water. Toss gently off heat until glossy, keeping the fish in large flakes.
  9. Finish with the basil, parsley, and a squeeze of lemon.
