- 500 g Pork
- 500 g Zucchini
- 25 g Ginger
- 3 Scallions
- ½ tsp Salt
- 1 tbsp Shaoxing wine (optional)
- ¼ tsp White pepper (optional)
Method
- Blanch the pork in boiling water for 3 minutes, discarding the scum, then rinse.
- Slice the ginger and knot the scallions.
- Simmer the pork with the ginger, scallion, and Shaoxing in plenty of water until tender, 45 minutes.
- Add chunks of winter melon and the salt and simmer until translucent, 12 minutes; finish with white pepper.
- Ladle into bowls and serve.
