Wonton Soup
Pork-and-shrimp wontons in a clear ginger broth.

Ingredients
- 30 Dumpling wrappers
- 250 g Ground pork
- 150 g Shrimp
- 1 Ginger
- 3 Scallions
- 1500 ml Chicken stock
- 1 tbsp Light soy sauce
- 1 tsp Salt
- 1 tbsp Toasted sesame oil (optional)
- ¼ tsp White pepper (optional)
Method
- Mince the ginger and scallions and chop the shrimp.
- Mix the pork and shrimp with half the ginger and scallion, the soy, sesame oil, and pepper.
- While you wrap the wontons, bring the stock to a simmer with the rest of the ginger and the salt, then drop to the lowest heat to hold.
- Spoon filling onto the wrappers and fold into wontons, sealing the edges with water.
- Bring the broth back up to a gentle simmer if needed. Slip the wontons in and cook until they float and are cooked through, about 5 minutes.
- Ladle into bowls with the scallions and serve hot.
