Ingredients

  • 1 Low-carb tortillas
  • 170 g Lamb
  • 1 tsp Cumin seeds
  • 1 tsp Red pepper flakes
  • 1 tbsp Neutral oil
  • ¼ tsp Salt
  • 15 g Scallions (optional)
  • 1 clove Garlic (optional)
  • 10 g Cilantro (optional)

Method

  1. Slice the lamb across the grain into wide, thin pieces and season them with the salt and half the cumin seeds, pressing the seeds in with your fingers.
  2. Cut the spring onion on a steep angle, chop the clove of garlic, and roughly chop the coriander stalks in with the leaves — the stalks belong in this one.
  3. Take the oil to just short of smoking and lay the lamb in with room around each piece; leave it two minutes to brown, then keep it moving with the remaining cumin and the chilli flakes until the fat has run and the edges have gone crisp.
  4. While the lamb crisps, put the low-carb tortilla on a dry pan alongside for a minute a side so it will fold without cracking down the crease.
  5. Add the garlic, spring onion and coriander, toss the pan twice and tip everything onto a board — those three should stay half-raw and green.
  6. Heap the lamb over one half of the tortilla, bring the other half across and press the join flat with your palm.
  7. Return the folded parcel to the hot pan, seam down, and lean on it with a spatula for two minutes a side until the outside is blistered and the two halves have set together.
  8. Cut it in two and eat it while it is still slightly too hot to hold comfortably.
