- 250 g Glutinous rice
- 280 g Black-eyed peas
- 200 g Corn kernels
- 50 g Peanuts
- 0.4 tsp Salt
- 2 tbsp Sesame seeds (optional)
- 80 ml Coconut milk (optional)
Method
- Soak the sticky rice and black-eyed peas for an hour, then drain.
- Simmer the black-eyed peas until nearly tender, 25 minutes, and drain.
- Toss the rice with the beans, corn, coconut milk, and salt and steam until glossy and tender, 22 minutes.
- Top with crushed peanuts and sesame and serve.
