- 500 g Long beans
- 3 Shallot
- 2 Lime
- 2 Thai chilies
- 40 g Peanuts
- 60 ml Coconut milk (optional)
- 1 tbsp Light soy sauce (optional)
- 1 tsp Sugar (optional)
Method
- Blanch the beans for 1 minute, drain, cool, and cut into short lengths.
- Toast the peanuts and slice the shallots and chili.
- Whisk the lime juice, light soy, sugar, and coconut milk into a dressing.
- Toss the beans with the dressing, shallots, chili, and toasted peanuts and serve.
