Ingredients

  • 900 g Lamb shoulder
  • 400 g Orzo
  • 1 Onion
  • 3 cloves Garlic
  • 400 g Canned tomatoes
  • 1 Cinnamon stick
  • 1000 ml Chicken stock
  • 3 tbsp Extra-virgin olive oil
  • 1 tbsp Salt
  • 100 g Feta (optional)

Method

  1. Heat the oven to 180°C (350°F).
  2. While the oven heats, cube the lamb into roughly 4 cm pieces and pat dry.
  3. Heat the oil in a Dutch oven over medium-high. Brown the lamb on all sides, working in batches so the pieces don't steam, about 6 minutes.
  4. While the lamb browns, chop the onion and mince the garlic.
  5. Add the onion and garlic to the pot and cook until softened, about 3 minutes.
  6. Tip in the canned tomatoes and tuck in the cinnamon stick, then simmer to bring the sauce together, about 3 minutes.
  7. Season with the salt, cover, and braise in the oven until the lamb is tender, about 50 minutes.
  8. Stir in the orzo and stock and bake until the pasta is tender and creamy, about 20 minutes.
  9. Remove and discard the cinnamon stick, crumble the feta over, and serve from the dish.
