  • 120 g Cherry tomatoes
  • 3 Thai chilies
  • 3 tbsp Fish sauce

  • 3 tbsp Cilantro (optional)
  • 40 g Peanuts (optional)

Method

  1. Soak the glass noodles in warm water until tender, then drain and cut into manageable lengths.
  2. Bring a small pot of water to a simmer and poach the shrimp just until pink and curled, then drain.
  3. While the shrimp cook, thinly slice the shallot, halve the cherry tomatoes, and slice the chilies.
  4. Whisk the fish sauce, lime juice, and sugar together into a sharp dressing.
  5. Toss the noodles, shrimp, and vegetables with the dressing until evenly coated.
  6. Top with cilantro and peanuts and serve.
