About Aloo Methi
Aloo methi is a North Indian dry side dish that pairs potatoes with methi — fenugreek — for a flavor you won't find anywhere else in the vegetable repertoire. Fenugreek greens carry a distinctive, faintly bitter, herbaceous edge, and playing them against soft, starchy potato is a classic balance in Punjabi and North Indian home cooking. This version uses kasuri methi, the dried leaves, which concentrate that signature aroma and make the dish possible year-round without needing fresh greens. It's a straightforward, vegan side meant to sit alongside a dal and roti rather than stand alone.
The cooking is simple but purposeful: cumin seeds are sizzled in oil to bloom their fragrance, the cubed potatoes are fried with turmeric and salt until golden at the edges and tender through, and the kasuri methi goes in near the end with green chili and garlic so its aroma stays bright rather than dulling. Crushing the dried fenugreek as it's added releases more of its warm, slightly maple-bitter scent, and letting the garlic lose its raw smell in those final moments keeps the finish clean. The result is a dish where crisp-edged potatoes carry the earthy, almost tea-like note of the fenugreek — humble, aromatic, and best served hot with roti to round out a simple Indian meal.
