About Aloo Tikki
Aloo tikki is a shallow-fried potato patty from North India, a fixture of street carts and tea-time snacking across the region. Boiled, mashed potato forms the body, bound and brightened by grated ginger, green chili, cumin seeds, and garam masala, with cilantro folded through for freshness and a scatter of peas adding pockets of sweetness. What makes a good tikki is the contrast: a deeply bronzed, crackling crust giving way to a soft, spiced interior — a texture you only get by mashing the potato properly smooth and frying patiently until crisp.
On the street, aloo tikki rarely travels alone; it's the base for chaat, crowned with tangy tamarind and cooling mint chutney, yogurt, and a shower of crunchy sev. At home it's just as happy served hot and plain with chutney alongside a cup of chai, or tucked into a bun as a tikki burger. This recipe is naturally vegan and comes together in about half an hour, using the boiling time for the potatoes as a window to prep the aromatics so nothing waits around — the key is shallow-frying over steady medium heat so the crust deepens without the patties falling apart.
