- 4 Artichoke
- 250 g Frozen peas
- 2 Carrot
- 1 Onion
- 20 g Dill
- 2 Lemon
- 5 tbsp Olive oil
- ⅜ tsp Salt
- 2 Potatoes (optional)
Method
- Trim the artichokes to the hearts and hold in lemon water; dice the onion, carrot, and potato.
- Soften the onion in the olive oil, add the carrot and potato and a little water, and simmer 10 minutes.
- Add the artichokes, peas, and salt and braise until all are tender, 18 minutes.
- Finish with plenty of dill and lemon.
