- 42 g Atta (whole wheat flour)
- 100 g Spinach
- 60 g Mushroom
- 100 g Firm tofu
- 15 g Ginger
- ¼ tsp Cumin seeds
- 1 tbsp Olive oil
- ¼ tsp Salt
- 1 Green chili (optional)
- 0.13 tsp Ground turmeric (optional)
- 5 g Cilantro (optional)
Method
- Work the atta with warm water into a soft dough that no longer sticks, then cover it and leave it to relax — an unrested wholemeal dough springs back and tears when you roll it thin.
- While the dough rests, wilt nothing and cook nothing: chop the spinach fine, grate the mushroom, grate the ginger and slit the green chili.
- Crumble the tofu into the vegetables with the cumin seeds, turmeric, cilantro and salt, then squeeze the mix in your fist and pour off the water it gives up — a wet filling steams the seam open on the griddle.
- Divide the dough, flatten each piece into a disc, cradle it in your palm around a spoon of filling and gather the edges shut, then roll the sealed ball out gently and evenly.
- Griddle the parcels in the olive oil over medium heat, pressing each one down, until both faces are freckled dark brown and the dough has stopped looking raw at the seam.
- Serve them straight off the griddle while the edges are still brittle.
