- 2 Corn tortillas
- 175 g Tuna
- 70 g White radish
- 1 Serrano chilies
- ½ Lime
- 1 tsp Olive oil
- 40 g Romaine lettuce (optional)
- 10 g Cilantro (optional)
- ½ tsp Mexican oregano (optional)
Method
- Blot the tuna dry, crush the Mexican oregano between your palms over both faces and press it in with a little salt.
- Slice the white radish into coins thin enough to see light through and the serrano into rings, then turn both through the juice of the half lime and leave them to slacken.
- Shred the romaine as finely as you can and strip the coriander leaves off their stalks.
- Set a heavy pan over a fierce flame with the olive oil and give it 2 minutes, then lay the tuna down and sear it 1 minute a face — the cut edge should show a cooked collar no deeper than a fingernail.
- Slide the tuna onto a board and give it 3 minutes off the heat. Carving it the moment it leaves the pan drives the juice out onto the board instead of into the taco.
- As the tuna sits on the board, give the corn tortillas 3 minutes in all on a dry pan, turning each one once, then fold them into a napkin where they keep their bend.
- Carve the steak across the grain into short thick slabs that will lie flat inside a tortilla.
- Carry the tuna, the tortillas, the radish, the coriander and the romaine over in one go and fill each tortilla only as you pick it up — tuna this rare greys within a minute against hot bread.
