- 2 Onion
- 2 Tomato
- 1 Ginger
- 4 cloves Garlic
- 2 Green chili
- 3 tbsp Neutral oil
- 1 tsp Salt
- 1 tsp Cumin seeds (optional)

Method
- Char the whole eggplants over an open flame or under a broiler, turning, until the skins are blackened and the flesh has collapsed.
- Chop the onion, tomato, ginger, garlic, and green chili.
- Peel away the charred skin from the eggplant and mash the smoky flesh.
- Heat the oil in a pan and crackle the cumin seeds, then fry the onion until golden.
- Add the ginger, garlic, chili, tomato, and turmeric and cook until the tomato softens and the oil separates.
- Fold in the mashed eggplant and salt and cook until thick, then finish with the garam masala.
- Scatter cilantro over the top and serve with roti.
