Ingredients

  • 700 g Eggplant
  • 1 Onion
  • 3 Tomato
  • 15 g Ginger
  • 3 cloves Garlic
  • 1 Green chili
  • 1 tsp Cumin seeds
  • ½ tsp Ground turmeric
  • 2 tbsp Extra-virgin olive oil
  • 0.4 tsp Salt
  • 3 tbsp Cilantro (optional)

Method

  1. Char the whole eggplants directly over a flame or under a hot grill until blackened and collapsed, turning, about 12 minutes.
  2. Dice the onion and tomato; mince the ginger, garlic, and chili.
  3. Peel and mash the smoky eggplant flesh.
  4. Fry the cumin, onion, ginger, garlic, and chili in the oil, then add tomato and turmeric and cook to a thick masala.
  5. Fold in the mashed eggplant and salt and cook 5 minutes to bring it together.
  6. Finish with cilantro and serve.
