- 500 g Okra
- 1 Onion
- 4 cloves Garlic
- 400 g Canned tomatoes
- 20 g Cilantro
- 4 tbsp Olive oil
- 0.4 tsp Salt
- 1 tsp Ground coriander (optional)
- 1 Lemon (optional)
Method
- Trim the okra caps and slice the onion.
- Sauté the onion in the olive oil, add the garlic and coriander, then the tomatoes and salt.
- Slip in the okra and simmer gently, without stirring much, until tender, 22 minutes.
- Finish with the cilantro and a squeeze of lemon.
