  • 500 g Okra
  • 1 Onion
  • 4 cloves Garlic
  • 400 g Canned tomatoes
  • 20 g Cilantro
  • 4 tbsp Olive oil
  • 0.4 tsp Salt
  • 1 tsp Ground coriander (optional)
  • 1 Lemon (optional)

Method

  1. Trim the okra caps and slice the onion.
  2. Sauté the onion in the olive oil, add the garlic and coriander, then the tomatoes and salt.
  3. Slip in the okra and simmer gently, without stirring much, until tender, 22 minutes.
  4. Finish with the cilantro and a squeeze of lemon.
