  • 1 Onion
  • 2 cloves Garlic
  • 400 g Canned tomatoes
  • 5 tbsp Olive oil
  • 0.4 tsp Salt
  • 15 g Parsley (optional)
  • 1 Lemon (optional)

Method

  1. Trim the okra caps and toss with a little lemon to keep them firm.
  2. Soften the onion and garlic in the olive oil, then add the tomatoes and salt.
  3. Add the okra and braise gently, without stirring much, until silky, 28 minutes.
  4. Finish with parsley and serve warm or cold.
