- 1 Onion
- 2 cloves Garlic
- 400 g Canned tomatoes
- 5 tbsp Olive oil
- 0.4 tsp Salt
- 15 g Parsley (optional)
- 1 Lemon (optional)
Method
- Trim the okra caps and toss with a little lemon to keep them firm.
- Soften the onion and garlic in the olive oil, then add the tomatoes and salt.
- Add the okra and braise gently, without stirring much, until silky, 28 minutes.
- Finish with parsley and serve warm or cold.
