Ingredients

  • 1 Low-carb tortillas
  • 210 g Chicken breast
  • ¼ tbsp Chinese sesame paste
  • ½ tsp Chili oil
  • 2 tsp Rice vinegar
  • 1 tsp Soy sauce
  • 100 g Cucumber (optional)
  • 40 g Carrot (optional)
  • ¼ tsp Sichuan peppercorn (optional)
  • 12 g Scallions (optional)

Method

  1. Lower the chicken breast into a small pan of water that is barely trembling, put a lid on and leave it fourteen minutes; if the surface starts to bubble properly the meat will go stringy.
  2. While it poaches, cut the cucumber into short batons, the carrot into fine matchsticks, and shred the spring onion lengthways into threads.
  3. Crush the Sichuan peppercorns to a powder in a mortar and whisk them into the sesame paste with the rice vinegar, the soy and the chilli oil, letting it down with cold water until it pours off the whisk in a thread.
  4. Lift the chicken out and let it stop steaming, then pull it apart along the grain into coarse threads — shredded, never sliced, so the dressing has something to cling to.
  5. While the chicken cools enough to handle, give the low-carb tortilla thirty seconds a side on a dry pan; it only needs to lose its stiffness, and colour would be a mistake here.
  6. Turn the shredded chicken through the sesame dressing until every thread is coated, lay it across the tortilla with the cucumber and carrot, scatter the spring onion threads over and roll it up.
  7. Halve it and eat it with the filling still cold against the warm wrapper, which is how this one is supposed to arrive.
