  • 3 Potatoes
  • 3 Tomato
  • 1 Onion
  • 3 cloves Garlic
  • 1 tbsp Dried oregano
  • 6 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 1 Eggplant (optional)

Method

  1. Heat the oven to 200°C (400°F), then cut all the vegetables into even, roughly 1cm-thick slices so they roast at the same rate.
  2. Toss the vegetables with olive oil, oregano, and salt in a baking dish.
  3. Bake, stirring once, until everything is soft and caramelised, about 50 minutes.
  4. Serve warm or at room temperature with bread.

About Briam

Briam is a Greek roasted-vegetable dish, a cornerstone of the summer table and of the ladera tradition — vegetables cooked slowly in plenty of olive oil until soft and sweet. Zucchini, potatoes, eggplant, tomato, and onion are sliced, tossed with oregano and extra-virgin olive oil, and baked together until they collapse into something between a bake and a confit. It's naturally vegan and, because it leans entirely on vegetables and good oil, tastes far more than the sum of its plain ingredients.
