- 1 Whole wheat tortillas
- 180 g Chicken breast
- 1 tbsp Hot sauce
- 45 g Greek yogurt (optional)
- 1 stalk Celery (optional)
- 40 g Carrot (optional)
- 60 g Romaine lettuce (optional)
- 4 g Dill (optional)
- ½ tsp Garlic powder (optional)
- ¼ tsp Cayenne pepper (optional)
Method
- Pat the chicken breast dry, cut it lengthways into thick strips and rub them all over with the cayenne and garlic powder.
- Stir the Greek yoghurt with the chopped dill until it is loose enough to spoon — this is the cold ranch that goes against the hot chicken.
- Slice the celery stalk on a long diagonal, cut the carrot into matchsticks and shred the romaine coarsely.
- Get a nonstick pan properly hot with nothing in it and lay the strips down in a single layer. Leave them four minutes before you touch them, then turn and give them two minutes more, until they are firm and browned in patches.
- Take the pan off the heat and pour the hot sauce straight onto the chicken, turning the strips until every face is coated and the sauce clings rather than pools.
- While the chicken takes its colour, lay the tortilla in a second dry pan over a low flame for a minute a side, just until it goes floppy and smells toasted.
- Spread the dill yoghurt down the centre of the warm tortilla, pile on the romaine, celery and carrot, then lay the buffalo chicken over the top and roll it away from you, tucking the ends in as you go.
- Halve it on the diagonal and eat it now, while the chicken is still hot against the cold ranch.
