About Butter Bean Mash

Butter bean mash is a warm, creamy purée of white beans whipped with garlic and olive oil, a Mediterranean-leaning side that acts as a faster, more savory stand-in for mashed potatoes. Because it starts from cooked butter beans, there's no boiling or peeling; the beans are simply warmed with sliced garlic and oil, then mashed or blitzed until smooth, which is why it comes together in around twelve minutes.

The texture is the point: loosened with splashes of water to a soft, almost soft-serve creaminess, it's rich from the olive oil yet light, with mellow garlic melted through and a squeeze of lemon and crack of black pepper to brighten it. Naturally vegan and high in fiber, it makes a versatile bed for anything saucy or seared, from roasted vegetables to a piece of fish or a lamb chop. Spoon it under the main and let the juices pool into it.
