  • 400 g Scallions
  • 2 Bell pepper
  • 50 g Almonds
  • 1 Tomato
  • 2 cloves Garlic
  • 4 tbsp Olive oil
  • 0.4 tsp Salt
  • 1 tbsp Sherry vinegar (optional)
  • ½ tsp Smoked paprika (optional)

Method

  1. Roast the peppers, tomato, and garlic at 200°C until soft and blistered, 25 minutes.
  2. Blend the peeled peppers, tomato, garlic, almonds, vinegar, paprika, salt, and olive oil into a romesco.
  3. Char the whole spring onions on a hot griddle until blackened outside and soft within, 10 minutes.
  4. Serve the onions with the romesco for dipping.
