Ingredients

  • 110 g Brown rice
  • 250 g Shrimp
  • 20 g Chipotles in adobo
  • 1 Lime
  • 1 tbsp Olive oil
  • 80 g Black beans (optional)
  • 120 g Tomato (optional)
  • 80 g Bell pepper (optional)
  • 12 g Cilantro (optional)

Method

  1. Rinse the brown rice, then simmer it in twice its volume of salted water, covered, until tender and the water is absorbed, about 30 minutes.
  2. While the rice cooks: peel the prawns. Chop the chipotles finely and mash them with the grated tomato into a rough paste.
  3. While the rice cooks: slice the pepper into strips, drain and rinse the black beans, and chop the coriander.
  4. Heat the olive oil in a wide pan over medium-high and cook the pepper strips for 4 minutes until they soften and blister at the edges.
  5. Stir in the chipotle-tomato paste and cook 4 minutes, until it darkens and the oil begins to separate out at the edges of the pan.
  6. Add the prawns and black beans and cook 3 minutes, turning them through the sauce until the prawns are pink and coated. Take the pan off the heat and squeeze in half the lime.
  7. Fluff the brown rice into a wide bowl and spoon the chipotle prawns and beans over it with all the sauce. Scatter the coriander and serve the rest of the lime cut into wedges.
